Cajun Chicken Lollies

Chicken lollies make fantastic party snacks for children. They’ll adore the nutty crunch of the chicken. Grownups will most surely enjoy them as appetizers.

Chicken Lolies 3

Serves – 4
12 chicken wings
2 cups bread crumbs
1 tsp salt
½ tsp black pepper powder
½ tsp paprika
½ tsp garlic powder
1 tsp cumin powder
½ tsp coriander powder
¼ tsp red cayenne powder
2 eggs
½ cup all-purpose flour
1 liter cooking oil

Cut chicken wing into 3 parts by slicing through the joints. Set aside wingtip for other use. .

You now have chicken wing in 2 parts. One with a single bone, and one with two bones.

Start with the part with one bone. Carefully cut meat around the bone by sliding a sharp knife around the tip. Hold wing vertically on top of a flat and gently push flesh, forming a small ball on the other side..

Now remove the small bone from the other part of wing, and repeat the same operation.

Season chicken lollies with salt and pepper and let it stand for 10 minutes.

In a bowl mix together flour, paprika, garlic powder, cumin powder, coriander powder, and red cayenne powder. Beat eggs in another bowl and combine with flour mix, until you get a smooth batter.

Dip chicken lollipop on the batter then onto breadcrumbs.

Heat oil in a fryer and deep-fry chicken lollipop, few at a time, on medium heat until golden (about 8 minutes).

Drain on paper towels, and serve with your favorite dip or the herb sauce. Share and enjoy!

Herb sauce
6 tbsp of mayonnaise
1 tbsp fresh dill weeds
½ tbsp of chopped chives
½ tbsp of fresh parsley
½ tbsp of fresh chopped coriander
½ tsp of white pepper

In a small bowl, mix all ingredients, cover and chill until ready to serve.
