Back from the beach, extend your summer holidays back home, with this fresh octopus salad, and remember the good times.
Serves – 61kg octopus
Juice of 1 lemon
1 tsp lemon zest
4 tbsp extra virgin olive oil
2 onions, thinly sliced
1 chopped green chili
1 chopped red chili
2 cups water
2 tbsp salt
1 tsp crushed black pepper
Clean octopus and cook in pressure cooker with 1 tbsp salt and water for 5 minutes. Carefully release pressure, and drain octopus. Allow to cool and cut into bites size pieces.
In a large bowl, combine lemon juice, zest, oil, remaining salt and pepper. Add remaining ingredients and octopus, Mix thoroughly.
Chill 30 minutes to one hour for flavors to develop, serve with French baguettes on the side.
