These fantastic calamari rings are also easy to make. In no time you will enjoy these antipasti with light dill sauce or ketchup.
Serves – 61kg calamari rings
2 eggs beaten
2 cups breadcrumbs
1 tsp salt
½ tsp cayenne pepper
½ tsp caraway powder
½ tsp ground white pepper
4 tbsp milk
Oil for frying
Heat oil in a medium-sized pot, oil should be about 4cm deep. .
Combine egg and milk in a bowl, drop in calamari rings, make sure to cover them with egg.
In another bowl, mix breadcrumbs with salt and spices.
Take calamari rings, one by one out of egg, shake off excess egg, and roll in breadcrumbs until completely covered.
Deep fry coated rings in hot oil, in batches, for 2 minutes, until golden brown and crisp.
Remove, drain on absorbent paper, and serve with dill sauce on the side.
