Chicken with Spinach

This great dish of chicken and spinach is full of nutritious iron, resulting in a tasty and healthy meal to your family.

Serves – 6
1 kg boneless chicken, cut into small strips
3 large bunches spinach
3 tbsp sunflower cooking oil
8 peppercorns
8 cloves
6 cardamoms
1 cup chopped onions
2 tbsp garlic paste
1 tbsp ginger paste
2 tbsp coriander powder
1 tbsp cumin powder
1 tsp Garam Masala powder
2 tomatoes, chopped
Salt to taste
2 tbsp Ghee

Wash spinach well. Put into a pot with half a cup of water and 1 tsp salt and boil till cooked.
In a food processor grind spinach into a paste. Keep aside.

Heat Ghee in a pan on a medium flame and stir fry chicken for 2 minutes, till well browned. Remove from pan, cover and keep aside

Heat Ghee once again, and toast all whole spices. As spices change color, add onions, ginger and garlic pastes and fry till onions turn golden. Add other spices and cook 3 minutes.

Add tomatoes and fry till oil begins to separate from the masala.
Add chicken mix well, stir in  spinach, add ¼ cup of water and cook till chicken is done and  most water dries up.

Serve with steam rice or hot Chapatis or Parathas (Indian flatbread).
