Caramel Chicken

A chicken dish for all seasons.

Caramel Chicken

Serves – 4
8 chicken thighs, quartered
1 green bell pepper, cut to bite size
1 yellow bell pepper, cut to bite size
1 cup dark brown sugar
1/2 cup fish sauce
1/3 cup rice vinegar
1 tbsp mushroom soy sauce
1 tbsp garlic paste
2 tbsp fresh grated ginger
2 tbsp oil
1/2 cup crushed roasted peanuts
1 bunch green onions, chopped

Whisk sugar, fish sauce, rice vinegar, soy sauce, garlic, and ginger in a bowl until sugar is completely dissolved, add chicken and marinate 15 minutes.

Heat oil in a large frying pan, remove chicken from marinade (reserve marinade) with a slotted spoon and cook until golden brown.

Stir in peppers, peanuts, green onions and reserved marinade, cover and simmer 20 minutes until chicken is cooked.

Serve with steam rice, and watercress salad on the side.
