Serves – 66 snapper or tilapia fillets, about 2cm thick
200g butter, melted
Blackened Fish Seasonings:
2 tbsp fine salt
2 tbsp sweet paprika
2 tbsp onion powder-
2 tbsp garlic powder-
2 tbsp black pepper
1 tbsp dried oregano
1 tbsp dried thyme
½ tbsp ground cumin
1 tsp cayenne red pepper
1 tsp caraway powder -
Combine all seasonings ingredients in a jar, close the top and shake well to blend.
You will need 3 tbsp of spices mix for this recipe.
Keep the rest in a close lid jar in fridge for later use.
Heat a large, cast iron skillet over high heat for at least 10 minutes, until smoking.
Dip fish fillets in melted butter.
Sprinkle generously with Blackened seasonings on both sides and place 2 at a time into the hot smoking skillet.
Careful! Move back, it will smoke!
Cook 3 minutes. Turnover, drizzle with 1 tsp of butter, and cook for 2 more minutes.
Repeat this process with other fillets.
Before serving, drizzle a tsp of melted butter over each fillet. Enjoy!
