Crispy, puffy, onions rings are superb as a quick snack or as a side dish with your favorite grilled kebabs.
Serves 4 – 6
1+ ½ cup plain flour
½ cup Polenta
1 tsp salt
1 tsp sugar
2 tsp cumin powder
1 egg yolk
150ml ice cold water
1 lt oil
Peel onions, and cut into 1cm thick circular slices, using a sharp knife. Separate into rings.
In a large bowl, combine flour, Polenta, cumin powder, sugar, and salt.
Mix in egg yolk. Then add water and whisk until you have a lump free smooth batter. .
Dip onion rings in the batter, and fry in very hot oil, until puffy and crispy.
Drain on paper towels and serve.
