Deviled Eggs with Anchovies

Quick and easy to prepare, deviled eggs garnish with anchovies, are a “must” during cocktail hours or great as starter serve on a bed of tomatoes, this summer.

Serves – 4

6 large hard boiled eggs, shelled
6 anchovy fillets, minced,
6 anchovy fillets, cut in 2
1/4 cup mayonnaise
1 tbsp Dijon mustard
2 tbsp lemon juice
½ tsp white pepper powder
1 pinch paprika
12 parsley leaves

Cut eggs in half lengthwise. Remove yolks to a bowl.

With a fork, mash egg yolks with mayonnaise, minced anchovies, Dijon mustard, lemon juice and white pepper.

Fill egg whites evenly with yolk mixture. Garnish with 1/2 anchovy fillet and 1 parsley leaf.
Sprinkle with paprika and serve.
